It’s summer time and that means it’s time to break out this refreshing salmorejo recipe!

So cool off with your favorite glass of wine–*cough* did someone say the 2020 Summer Blend? *cough*–and enjoy this refreshing Spanish summer staple.

Before we get started, pour yourself a glass– we’re going to go with a glass of our Summer Blend. Now, let’s get going!


This dish, originally from the city of Córdoba in southern Spain is a go-to when the temps start to climb. It’s tasty, quick, and the perfect last-minute meal.

But it’s not the only Spanish influence as we cook today. If you’ve tried our 2020 Summer Blend, you’ve noted the fruity notes on the nose provided by the Albariño varietal. See, our blend is 90% Chardonnay and 10% Albariño, a grape originally from northern Spain and Portugal. The Chardonnay gives it body and structure while the Albariño adds aromatics.
