The Sippin’ Chef: Easy Recipe for Lamb Chops

We’re back in the kitchen with an easy recipe for lamb chops with red wine and rosemary sauce. No long story about how this recipe was passed down from our great-great-grandmother, just the good stuff.

When it comes to cooking something up for your loved ones, this easy lamb chops recipe is sure to become your go-to. So with no further ado, let’s dive in!

Easy Recipe for Lamb Chops

Ingredients

  • 8 lamb loin chops

  • 1 tbsp butter

  • 2 tbsp olive oil

  • 3 garlic cloves, minced

  • 1 shallot, finely diced

  • 1 tbsp fresh thyme

  • ¼ cup Cabernet Sauvignon

  • ¼ cup of chicken broth

  • 1 tbsp fresh rosemary

  • Salt and pepper to taste

Steps

  1. Salt and pepper the lamb chops on both sides.

  2. Next, line a pan with foil and place in the oven. Pre-heat to 200 F (the pan will get nice and toasty this way too!).

  3. In a large cast-iron skillet, heat 1 tablespoon of olive oil on high until very hot. Carefully add half of the lamb chops and cook about 4 minutes on each side – a nice golden crust should have formed. Add the remaining olive oil and cook the remaining lamb chops. Once all are cooked, place in the oven to keep warm while you whip up the sauce.

  4. Then reduce the heat on your skillet to medium-high. Add the shallots and garlic, stirring constantly so they don’t burn – about one minute. Next, add the broth, wine,  and the rosemary and thyme, and bring to a boil. Carefully scrape the crunchy bits at the bottom of the pan up and stir. Simmer until the liquid is reduced to roughly half (about 5 minutes). Remove and whisk in the butter.

  5. Finally, remove the warm lamb chops from the oven and transfer to your serving dish. Now, here’s the (second) best part: pour the sauce over them and serve.

This dish goes great with garlic potatoes or your favorite hearty side!
